You could try exporting your Exchange contacts and upload them to a gmail account, which is easily synced with the iPhone.

I want to sync my family’s iPad to a new computer, and add movies, music, podcasts, etc. From the new one, but keep the apps from the old one. On the new PC, I set iTunes not to sync automatically and plugged in the iPad. I clicked on the name of the iPad in the iTunes sidebar and went to each tab of different content (i.e. Music, Movies, Books, Info, etc.) and set it to sync selected music, movies, TV shows, and podcasts, but made sure NOT to sync apps. However, when I clicked Apply, the warning popups scared me off. Will I lose the apps if I sync my iPad with the new computer, even though I have the “Sync apps” box unchecked?
